Sacha, Madrid, 3/26/15

This small family run place was one of our favorites on our last visit so even though it’s not conveniently located we re-visited. A couple started it in 1972 and named it for their son, Sacha, who took it over after culinary school It has a feel of elegance from the appointments and the clientele and appears to have a host of regulars that make it a hard reservation to get. One word of caution also is that most of the staff does not (or maybe chooses not) to speak English.

We started by splitting 2 of their first plates – the salad of little greens was unlike I’ve had with a light olive oil dressing it was nutty and delicious. We also had the fried artichokes and they were divine, I think I could have eaten a whole order! My husband had the steak tartar and fries and it was fine but my mouth was watering for a repeat of the bone marrow dish I had last time. Marrow cooked perfectly and served in an incredibly viscous sauce with bread for dipping and accompanied by a simple plate of the most juicy and flavorful grilled beef you could ask for. We finished with their house specialty flan that is so sweet and thick it almost seems sticky, not in a bad way but to call it flan seems to not describe it sufficiently.

Overall this place packs flavor into each bite and serves up some fine food but it has vibe which is more like what many tourists expect to receive in French restaurants – not the friendly and attentive service given to the locals, but the tastes are so exquisite you might find me there again willing to put up with whatever to eat this man’s cooking!
