Twin Farms tasting menu (update), Barnard, VT., 10/2025

Chef Nathan Rich curates the tasting menu at Twin Farms with the help of a good team.  They were in the midst of a kitchen expansion when we were there which will add the option of chef’s dinners in the kitchen and a window for guests in the dining room to look into the kitchen action.  On  the menu it states that they will modify the tasting if you chose to have it consecutive nights but with their flexibility in plating it’s easy to create your own tasting of the options that interest you.  The server will caution you that the tasting takes at least 2 hours as it’s about 10 courses.  There were no amuse or extras course not on the menu but it did take over 2 hours however the pacing was quite slow.  Wine pairings are available or there are a limited number of bottles you can order, that are included in your fee or there is a reserve wine list that comes with an additional fee.  The pairing pours are mostly from bottles the sommelier chooses and they are not on the list for you to chose from.  They are usually well matched but mostly inexpensive wines.  When the room grew crowded it was mostly impossible for the sommelier to refill an empty glass in a timely fashion.  Overall the tasting was good but I found it interesting that the only fish was the lobster salad in an appetizer.   Also the bread is its own course and not served to go with the entire meal (an annoying trend I’ve noted in other restaurant tastings).  If you want to see our 2024 tasting menu dinner click here.  I hope you’ll let me know what you think if you go! La Fia Bistro, Wilmington, DE., 4/4/24

La Fia was in the historic area of downtown in a corner building.  Owned by Bryan and Andrea Sikora, it opened in 2013 with Bryan as chef.  You enter into the area that has some goods for sale and you can look into the long kitchen.  The main dining room seats around 35  people with closely set small bare wood tables.  From the high tin ceiling hang ducts and a variety of light fixtures.  Windows to the street are on 2 sides of the room and music was in the background.  A few higher seats face the bar and the front windows and there was a second smaller dining room.  The current Executive Chef Dwain Kalup, focused on local and sustainable ingredients with a seasonally based menu.  On Wed. night they have a 3-course $40 menu with some optional supplements.  As we were there on Thurs. we made our own tasting menu.  There were no specials offered, as supplements to the menu.  It was only a minute’s walk from our hotel but it would be worth driving to as the food was quite good. Trillium Cafe and Inn, Mendocino, CA., 3/13/22

Trillium Cafe serves lunch and dinner Friday thru Tuesday with indoor and outdoor seating.  It is on the bottom floor of the Inn of the same name in the heart of Mendocino.  On the second floor are several hotel rooms for guests.  Small tables are well spaced in the interior dining room and the patio winds around with a good supply of seating.  When you make reservations you can specify indoor or outdoor.  As it’s in an historic home, there are lots of windows to the street and a fireplace.  Art for sale is on the walls and there ‘s plenty of street parking.  It has obviously been restored with the old wood floors in good shape and the light fixtures replaced with those made by local artisans.  A bar was in a room to the right, when we entered but I only saw 2 vacant stools in front of it.  Service was friendly and efficient but not particularly knowledgable about the history of the place.  There were no daily specials just the changoing soup of the day flavor.  However when I compared the menu we had to what was on line there were some changes. This restaurant is located in the lovely Mandarin Oriental Hotel and thus I’ve included a number of photos of the hotel reception and pass through to get to the restaurant. They set up a feeling of elegance for the diner and the restaurant did not disappoint.
