
The Dallas Cowboys Football Team built a large facility to practice north of Dallas, in the town of Frisco. Besides the practice fields, weight room, ect. there are offices and some are leased by our financial team who are members of the dining room at The Star. The only way you can eat there is to be a member or the guest of a member, but I thought you’d be interested in the place either way. No photos of the practice area are allowed, but I got a few of the room and our lunches. It’s a large place with a bar area and lots of couch seating too. Bottles of wine are used to form walls for some of the more private dining rooms. Service was excellent and the place is bright and attractive. The food was fine but no football players or other celebrities were spotted, other than Frankie of course.

Food
We started with an appetizer of Cornbread that contained Fresno chilies and fontina cheese with a side of honey butter. This was heavy, sweet and delicious even without the sweet rich soft honey butter. It was browned lightly on the exterior adding to its lovely texture. A winner.


The spinach salad also had Cara Cara orange, smoked almonds, and goat cheese with a white balsamic dressing. Salads can be topped with any protein and she added some grilled salmon. It looked like a lot of spinach but she ate the salmon.

The Escarole salad came with red onion, caper, lemon, parmigiano reggiano and sourdough and then he added some blackened salmon. Again a lot of greens and many left but the salmon was consumed.

Cowboy Wagyu Steak and Frites looked cooked more than medium rare to me but was enjoyed.

The Smoked Turkey Sandwich also contained applewood bacon, avocado, tomato and pimento. Sandwiches came with fries or salad and he chose fries. It was a huge sandwich. This was apparently a Jones family favorite.

A special sandwich that day was Mortadella topped with giardiniera and cheese on a hoagie roll. I chose the fries as my accompaniment. It was a smaller sandwich than the turkey but suffered from the disproportioned stuffing of the sides with ingredients. Also, the giardiniera packed little to no punch. The overall combination was a good one but wasn’t heavily endowed with flavor. The fries were crisp and doused with seasoned salt.


We were all fairly full and opted to split an order of the Brown Butter Chocolate Chip Cookies. They came a huge 3 to an order – and they were pretty massive. Stuffed with gooey chocolate, they were a fine finish to the meal.

I was surprised at the number of players I remembered from the 1982 team, and I’m not a Cowboys fan!
Was that a chimichurri sauce on the steak? It definitely lacks pink, but wagyu’s so rich it can get away with being done to medium.
I’m impressed, but that’s when they were playing much better. Not sure what the sauce was.
